Sen: Manzo bollito con “pearà”, beef with pepper sauce, is also typical of Verona cuisine. This sauce is made of pane, midollo di bue, brodo, sale, e olio, bread, beef marrow, broth, salt, oil and last but not least, pepe, pepper. That is why it’s called "pearà", or "the peppered" in the Verona dialect! This dish is a specialty of the cucina povera e semplice, the poor and simple cuisine. And of course don’t forget the wine! Verona is one of the Italian provinces where the so-called vini D.O.C., or D.O.C. wines are produced.
