First, si forma una pallina – you form a small ball – from the cooked riso. Then, you add the other ingredients and when it’s all come together, you fry it in oil, or rather, si frigge nell’olio. Arancine aren’t just a culinary symbol of Palermo. Vera says they also represent the history of the city. And, it kind of sounds like the Italian word for orange, arancia. Do they have anything to do with one another?
